Carolanne LeBlanc freely admits that she is an un-diagnosed Celiac. Getting diagnosed with Wheat Allergies over 30 years ago was only the beginning in a lifelong journey of understanding and discovery. A very social person herself, Carolanne manages a web-based Support Group called “Gluten-Free in Florida” designed specifically for people living or visiting in the Sunshine State. The group gives people across the state an opportunity to talk to others, exchange recipes, share information and education as well as find support. She also maintains an active web-page with contacts around the Globe and sees first-hand how Celiac Disease and Gluten Intolerance can affect all kinds of social interactions, making it difficult to navigate even the most common gatherings. Carolanne is a big advocate for taking control of our own health, listening to our body’s needs, speaking up for ourselves, and of course attending local Support Groups.

After working for 20 years in the corporate world, Tarah Jakubiak founded Allergic Traveler. Jakubiak, president of Allergic Traveler has traveled the world since the age of two. She has been to 22 countries and 25 states. Jakubiak has been to all inclusives, gone on cruises, gone camping; backpacking through Europe, gone to the big cities, and little hidden gems. She has multiple food allergies but it does not stop her from seeing the world. Jakubiak is allergic to eggs, nuts, mushroom, soy, garlic, corn, sesame, potatoes, celery, shellfish, chicken, pork, peanuts, and many fruits. She is originally from Montreal, Quebec and now lives in Greensboro, NC with her husband.

Jet Widick, the author and poet behind the popular Gluten Free Sage blog, is a wellness expert and advocate for Celiac Disease who has worked to share her story, hoping that others will find inspiration through it. Jet, a nickname her sons bestowed her once she identified her illness and discovered pure wellness, has taken on many creative projects since she published her first three collections of poems, including her newest book, Gluten Free Soul Pilot.
Kristen Alden is an independent creative consultant and graphic designer with over 15 years of experience in broadcasting, marketing, and brand development for nonprofits, small businesses, and entrepreneurs. While working as a creative communications expert, Kristen's passion for health and wellness has inspired her to join projects with missions to help others better themselves. She believes that great design has the power to educate, inspire and ignite change.
Rustie McDonald
Rustie is an Author, Speaker, Single Mother, Advocate and International Radio Talk Show host. She has a B.A. in Psychology from Johnson State College in Vermont and has enjoyed more then 20 years in Sales, Marketing and Event Coordination. Throughout life, Rustie has experienced some major adversity and after a messy divorce, decided to share her story for others to Live & Thrive. Her Radio Talk Show Aired Wednesdays 1pm EST and was heard from every country in the world as she gained fans, she also began to write. She is a multi-published Author and has several more books on the way. She currently resides in Florida with her daughter, Chloe and small Dog Bella.
Rustie has recently spoken to several School Districts throughout New England, the Gluten and Allergy Free Awareness Group, The Granite State Managers Association and 1 Billion RISE.
Rustie Speaks on Domestic Violence, Poverty and Food Allergies all over the country. Her workshops continue to grow inviting women from all over the country to learn how to heal, cope and grow through travesty.
Nikki Everett founded ECHO Event Solutions, LLC in 2011 to oversee educational events and trade shows for the gluten/allergen free community. Her mission to plan events started in Charlotte, NC, her home town, in 2009. Nikki uses her vast knowledge as an advocate for the gluten/allergen free community on behalf of her daughter who was diagnosed with celiac disease in 2008. She recognized her daughter's grief process through her support group background as a teenager. After the unfortunate death of her older brother, Nikki's mother became a regional leader for Compassionate Friends, a national support group for bereaved families, when Nikki was only 11 years old. Nikki went on to become a youth peer support group leader by 14 years of age. Her presentation to the NC State Board of Education helped open the door for peer support groups throughout Middle and High Schools across the state. Nikki carried on this legacy as an adult by chartering R.O.C.K. (Raising Our Celiac Kids) for Charlotte, NC in 2009. Her positive approach to the journey of dietary change makes each event a celebration of community wherever they are held.
